The baobab is the iconic tree of the West African savanna, and some of the trees in northern Togo, in the Savanes and Kara regions, are centuries old. Their fruit is unique: it dries naturally on the branch inside a hard, velvety shell. Inside, the chalky white pulp tastes tangy and slightly sweet, like sherbet, and is naturally rich in vitamin C, fibre, calcium and potassium.
In Togo and across West Africa the pulp is soaked to make bouye juice, stirred into porridges and sauces, or ground into baobab powder, now a popular superfood ingredient for smoothies and snacks.
