Walk through any market in Lomé and the “citron” you will see piled on every stall is the small green lime. Thin-skinned and very juicy, it has an intense, aromatic acidity that West African cooks use in marinades, on grilled fish, in sauces and in fresh drinks. Bars and restaurants love it for cocktails and lime juice.
