Cabbage is one of the most common vegetables in Togolese market gardens, from the irrigated plots along the Kara river in the north to the gardens of the south. Growers use tropical hybrid varieties bred to form firm heads in the heat, such as Super Comet F1, Leader Cross F1, Vizir F1 and Sultana F1.
The heads are cut when tight and heavy, trimmed of loose outer leaves and sorted by weight. Their crisp, sweet leaves are a base for coleslaw, stir-fries, soups, stews and the cabbage sauces of West African cooking.
