The Muscovy duck (canard de Barbarie) is the duck most commonly raised in Togo and its neighbours, by small farms and village households. Its eggs are larger than hen eggs, with a white to cream shell that is thicker and stronger. The yolk is bigger and richer, so bakers and pastry cooks use duck eggs for cakes, custards and fresh pasta, and some restaurants and Asian food shops ask for them by name.
How we supply them:
- Eggs of about 70–80 g, ungraded.
- Packed on trays of 30 eggs, or by the carton of 10 trays (300 eggs).
- Collected from several farms, candled to remove cracked or fertilised eggs, kept cool (10–15 °C) and delivered by refrigerated truck.
- Laying is heaviest from April to September; volumes are smaller in the dry season, so we confirm them before each delivery.
- Minimum order: 5 trays.
As with all duck eggs, they should be cooked thoroughly before eating.
Where we deliver: this product is sold and delivered in West Africa only (WAEMU countries), priced in FCFA. It is sourced from poultry farmers in the delivery country and is not exported to Canada.
