Green cabbage is a familiar sight in Togo’s market gardens, but red cabbage is rarer: it needs cool nights to form tight, well-coloured heads. Our partner growers plant it for the harmattan season, from November to February, when dry, cooler air gives the best results. Volumes are limited, so we recommend booking your order in advance.
The heads are cut when firm and heavy, trimmed of their outer leaves and sorted by weight. Their deep purple colour comes from natural anthocyanins, and their crisp, slightly peppery leaves hold up well raw or cooked.
How we supply it:
- Two sizes, about 1 kg and 1.5 kg per head.
- Packed in 10 kg cartons, 20 kg mesh sacks, or by the pallet of 500 kg (25 × 20 kg sacks).
- Kept at 0–4 °C and high humidity, where red cabbage keeps for months, so it travels well by refrigerated container.
Use it in coleslaw, salads, braised dishes, pickles and stir-fries, or to add colour to any vegetable mix. Every lot is traceable to the farm.
Volumes are limited, so book early for the coming season.
