Voandzou, also called Bambara groundnut, is one of Africa’s oldest crops. Like the peanut, it buries its pods in the soil, but its round seeds taste more like a creamy, nutty bean. It grows well in the dry savanna of northern and central Togo, from Kara to Sokodé, where it is sought after and often scarce: market prices in Kara recently reached record levels.
For West African families in Canada it is a taste of home, boiled and seasoned, mashed into a paste, steamed in leaves or ground into flour for fritters and puddings. It is also rich in protein, fibre and minerals, a strong fit for plant-based food makers.
Two varieties:
- Cream (white): light seeds with a mild, buttery taste.
- Red: red to burgundy seeds with a deeper, earthier flavour.
