Purple Eggplant
Glossy, dark purple eggplants of about 250–350 g, mild and creamy once cooked, grown by market gardeners in southern Togo. Grill it, roast it, or use it in curries, stews and moussaka. Harvested young, sorted by size and flown in fresh.
