Our dried chilies start as fully ripe red peppers from farms in Togo. They are spread out in the sun until completely crisp, at 12 % moisture or less, then sorted to remove stems, broken and discoloured pods. It takes about 4 to 5 kg of fresh chilies to make 1 kg of dried ones, which concentrates both the colour and the heat.
Food safety comes first: every lot is tested for aflatoxins and ships with its certificate of analysis, as required for food imports into Canada.
How we supply them:
- Whole dried pods in food-grade lined woven sacks of 10 kg or 25 kg, or by the pallet of 500 kg (20 × 25 kg).
- Stored cool, dry and away from light, they keep for 12 months or more, and travel by sea freight in standard dry containers.
Grind them into chili powder or flakes, or use them in pepper pastes, hot sauces, spice blends and chili oils. Every lot is traceable to its farms of origin.
We can send a sample before your first order.
